Amaretto Cheese-Filled Apricots

Ingredients:
115g cream cheese, softened
1/3 cup slivered almonds, toasted and chopped
1/4 cup dried cherries or dried cranberries, chopped
2 tablespoons amaretto liqueur
30 soft whole dried apricots
Method:
1. In a small bowl, combine the cream cheese, some almonds, the cherries or cranberries, and the amaretto with a spoon.
2. Spoon the mixture into a small, resealable plastic bag. Cut one centimetre off one corner of the bag.
3. Use your fingers to open the apricots along one side, so that they resemble partially-open clamshells.
4. Pipe one teaspoon-sized mixture into each apricot.
5. Dip the cheesy edges of the apricots into the rest of the almonds. Refrigerate for one hour before serving.
