Apricot and Feta Salad

Ingredients:
A few handfuls of lettuce
4 to 6 fresh apricots, quartered
Feta cheese, crumbled
1 tsp Dijon mustard
1 tsp maple syrup
2 tbsp apple cider vinegar
5 tbsp extra virgin olive oil
1 tablespoon of fresh lemon juice
Sea salt
Pepper
A few sprigs of fresh tarragon, sliced
Method:
1. Wash the lettuce well and then spin to dry.
2. For the dressing, whisk together the Dijon mustard, maple syrup, apple cider vinegar, olive oil, lemon, sea salt, pepper and tarragon in a small bowl. Taste and adjust seasoning as desired.
3. On two plates, assemble the lettuce and top with the quartered apricots and crumbled feta. Drizzle the salad with the dressing.
