Apricot Chicken

Ingredients:

8 chicken thighs
1 punnet button mushrooms, sliced
1 sachet brown onion soup powder
30ml mayonnaise
30ml apricot jam
250ml apricot juice
200ml water

Method:

1. Preheat oven to 180 degrees Celsius.

2. Arrange the chicken thighs and the button mushrooms into an ovenproof dish.

3. For the sauce, mix together the brown onion soup powder, mayonnaise, apricot jam, apricot juice and water in a separate bowl. Pour the sauce over the chicken thighs.

4. Place the dish in the oven. Bake for 45 minutes or until the chicken thighs are cooked through.
