Autumn Sweet Potato Smoothie

Ingredients:

1 sweet potato, medium-sized
1 tablespoon of chia seeds
80ml water
1 persimmon, peeled and diced
100ml unsweetened vanilla almond milk
1 dash cinnamon
A sprinkle of turmeric

Method:

1. Boil or bake the sweet potato until it is nice and soft. At the same time, add one tablespoon of chia seeds to the 40g water and set aside to thicken into a gel.

2. In the blender, add the diced persimmon, the chia seed gel, and around 50ml of the almond milk. Blend until smooth.

3. Peel the sweet potato. Mash it with a fork until it looks like a puree. Add it to the blender with the rest of the almond milk, cinnamon, and turmeric.

4. Pour into glasses, sprinkle with cinnamon and enjoy!
