Avocado and Mint Smoothie

Ingredients:
60ml boiling water
20 raw almonds
10cm piece of cucumber, cubed
1 celery stalked, sliced
2 handful baby spinach or kale, shredded
1 small ripe avocado
10 fresh mint leaves
5ml lemon juice – more to taste
Black pepper to taste
Method:
1. Pour boiling water over the almonds. Allow them to stand for 10 minutes.
2. Place the almonds and water in a blender. Cover and process until blended and smooth.
3. Add the rest of the ingredients. Process until blended and smooth.
4. Add a pinch of pepper and stir through.
5. Pour into glasses. Serve immediately.
