Avocado Smoothie

Ingredients:

60ml boiling water
20 raw almonds
10cm piece of cucumber, cubed
1 celery stalk, sliced
2 handful baby spinach or kale, shredded
1 small ripe avocado
10 fresh mint leaves
5ml lemon juice, and more to taste

Method:

1. Pour the boiling water over the almonds and allow to stand for 10 minutes.

2. Place the almonds and water in a blender, and blend until smooth.

3. Add the rest of the ingredients. Blend until smooth.

4. Add a pinch of pepper and stir through.

5. Serve immediately.
