Baked Eggs in Whole Tomatoes

Ingredients:

6 large tomatoes
6 large eggs
2 garlic cloves, crushed
Olive oil
Dried thyme
Salt and pepper to taste

Method:

1. Cut the end off of each tomato, and then use a tablespoon to hollow out the inside, removing the seeds and the core.

2. Preheat the oven to 200 degrees Celsius. In a large baking dish, arrange the tomatoes and drizzle with olive oil.

3. Crack an egg into each of the tomatoes and season with the garlic, thyme, salt and pepper, to taste.

4. Bake for about 8-10 minutes, or until the egg sets. Serve while still warm.
