Banana and Pineapple Salad

Ingredients:
1 tin coconut milk
2 firm ripe bananas, peeled and sliced
2 tomatoes, sliced
1 small pineapple, peeled and sliced
1 avocado, peeled, pitted, and sliced
Roasted peanuts, chopped
1 fresh mint for garnishing (optional)
Method:
1. Boil the coconut milk until it thickens, then set it aside to cool.
2. Pile the bananas, tomatoes, pineapple and avocado alternately in layers into individual glass salad bowls.
3. Top with chopped peanuts, and then pour over the thickened coconut milk. Allow to chill.
4. Garnish with mint and serve cold.
