Barbecued Strawberry Chicken

Ingredients:
2 tablespoons canola oil
4 chicken breast halves, boneless and skinless (170g each)
2 tablespoons butter
40g red onion, finely chopped
225g barbecue sauce
2 tablespoons brown sugar
2 tablespoons balsamic vinegar
2 tablespoons honey
1 cup sliced fresh strawberries
Method:
1. Preheat oven to 180 degrees Celsius.
2. In a large ovenproof skillet, heat the oil over medium-high heat. Brown the chicken on both sides. Remove from the pan.
3. In the same pan, heat the butter over medium-high heat. Add in the onion. Cook and stir for one minute until tender.
4. Stir in the barbecue sauce, brown sugar, vinegar and honey. Bring to a boil, then reduce the heat. Allow to simmer for four to six minutes, uncovered, until the mixture thickens
5. Return the chicken to a pan. Bake for 12 to 15 minutes, then stir in the strawberries. Serve afterwards.
