Basil Pesto-Crusted Fish

Ingredients:
4 slices seeded bread
80g fresh basil pesto
2 x 400g fillets fresh hake
Sea salt and freshly ground black pepper, to taste
5 baby marrows, grated
1/2 red cabbage, shredded
2 tablespoons olive oil
1/2 lemon, juiced
Method:
1. Preheat the oven to 220 degrees Celsius.
2. Process the seeded bread slices in a blender to make breadcrumbs.
3. Brush the basil pesto onto the hake fillets.
4. Arrange the fillets on a baking tray. Top them with the breadcrumbs, season with salt and pepper, and bake for 15 to 20 minutes, until the fillets are firm, and the crumbs are crunchy and browned.
5. In a bowl, toss together the marrows, the cabbage, olive oil, lemon juice, salt and pepper. Serve with the fillets.
