Cajun-Crumbed Fish Burger

Ingredients:

4 frozen hake fillets, defrosted
50ml flour
2 to 5ml Cajun spice
1 egg, lightly beaten
350g ciabatta breadcrumbs
45ml each butter and sunflower oil
4 bread rolls, or 1 long baguette cut into 4s
50ml mayonnaise
Rocket leaves, tomato slices, lemon wedges and chips, to serve

Method:

1. Use paper towels to pat the fillets dry with paper towels.

2. In a bowl, combine the Cajun spice and the flour. Mix thoroughly before using it to coat the fillets.

3. Coat the fillets in egg and then in breadcrumbs.

4. Heat the butter and oil in a frying pan over medium heat. Fry the fillets until they have cooked through and the crumbs are golden brown.

5. Cut the rolls open and spread with mayonnaise. Top with a fish fillet, some rocket and tomato slices.
