Carrot Bredie with Lamb Shanks

Ingredients:
80ml olive oil
1.5kg short lamb shanks
2 red onions, quartered
2 garlic cloves, finely chopped
3 sprigs fresh rosemary
Salt and freshly ground black pepper
600g small carrots
Method:
1. Heat oven to 180 degrees Celsius. Pour 60ml of olive oil into an ovenproof dish.
2. Place the lamb shanks in the dish, and add the onions and garlic cloves. Place the rosemary on top of the meat, and season with salt and pepper.
3. Pour the rest of the olive oil over the meat, then cover the dish with tinfoil. Place in the oven and roast for 75 minutes.
4. Remove the tinfoil and add carrots.
5. Return the dish to the oven and roast uncovered for another 30 minutes, until the carrots are soft and the meat nicely browned.
