Cheddar Cheese Bites

Ingredients:
125g plain flour
80g butter
125g feta cheese
1 egg
80g cheddar cheese, grated
1 teaspoon paprika
A pinch of salt
Method:
1. Preheat the oven to 180 degrees Celsius.
2. In a large bowl, combine the flour with the butter. Mix until it resembles breadcrumbs.
3. Add the feta and half of the amount of the grated cheddar cheese. Mix to form a dough.
4. Shape it into a ball, cover with clingwrap and refrigerate for 30 minutes.
5. Place the dough on the working surface. Roll it until it is about 0.5cm thick. Then, cut rounds using either a cookie cutter or a smaller glass.
6. Beat the egg lightly with the pinch of salt. Add the paprika and brush each round with the mixture.
7. Sprinkle over with the remaining cheddar cheese over. Bake in the oven for about 20 minutes, or until the bites are puffy and golden.
8. Leave to cool completely, then serve and enjoy!
