Cheesy Broccoli Bites

Ingredients:

150g broccoli florets

2 large eggs

1/2 teaspoon salt

50g bread crumbs

60g Parmesan cheese, grated

2 tablespoons olive oil

Method:

  1. Steam the broccoli floret until fork-tender.
  2. Add the florets, eggs, salt, bread crumbs and cheese to a food processor. Blend just until finely chopped.
  3. Use one tablespoon at a time to form the mixture into balls.
  4. Heat the oil in a skillet. Drop the cheesy broccoli balls into the hot oil, flattening with a spatula. Cook both sides until crispy.
  5. Serve warm and enjoy!
