Cheesy Cauliflower Nuggets

Ingredients:
200g cauliflower florets, fresh or frozen
200g cooked white or brown rice
1 egg
1 egg white
3/4 teaspoon garlic powder
1/4 teaspoon onion powder
85g cheddar cheese, grated
3/4 teaspoon salt, to taste
Method:
1. Pre-heat oven to 200 degrees Celsius. Line a large baking tray with parchment paper.
2. Bring a pot with a steamer basket to a boil. Add cauliflower, and steam for five minutes. Afterwards, transfer to a strainer and rinse with cold water. Let the cauliflower drain well and press down on it with the back of a spoon to help draw out extra water.
3. Run cauliflower through your food processor until finely chopped. Alternatively, you can finely chop it by hand, pulse it in a blender, or mash it with a potato masher.
4. Add the cauliflower to a large bowl with the remaining ingredients. Mix well.
5. Using a heaping tablespoon or small cookie scoop, portion the softened mixture into your hand to form a nugget. Place the nuggets onto the baking tray.
6. Bake for seven minutes. Flip, and press down gently on each nugget to flatten them a bit. Return to the oven and bake for another seven minutes.
7. Remove the tray from the oven, allowing to cool for five minutes. Enjoy with your favourite dipping sauce or as a side dish to any meal.
