Chocolate Chilli Cupcakes

Ingredients:
Dry ingredients:
400g sugar
7ml bicarbonate of soda
100g cocoa powder
250g cake flour
10ml dried chilli flakes
5ml salt
Wet ingredients:
250ml buttermilk
5ml vanilla essence
2 extra-large eggs
125ml oil
250ml hot water
Topping:
100g Bar-One chocolate bar
60ml cream
Method:
1. Mix the dry ingredients together in a large bowl.
2. Whisk the wet ingredients together in a large jug or a bowl.
3. Add the wet ingredients to the dry ingredients, and beat for about two minutes until smooth and well combined.
4. Spoon the mixture into the paper cases to three-quarters full.
5. Bake for 15 to 20 minutes or until done. Leave to cool on a wire rack.
6. For the topping, melt the ingredients in a glass bowl over a saucepan of boiling water or in the microwave for one to two minutes, stirring from time to time. Leave to cool slightly, then spread over the chilli cupcakes.
