Chocolate Chip Chickpea Cookies

Ingredients:
400g chickpeas, drained and rinsed thoroughly
80g oats
2 medium bananas
50g brown sugar
1 teaspoon vanilla
1 teaspoon baking powder
40g dark chocolate chips
Method:
- Heat the oven to 180 degrees Celsius.
- Place all ingredients excluding the chocolate chips into a food processor. Blitz for 2-3 minutes until very smooth.
- After removing the blade from the processor, add the chocolate chips and mix with a spoon.
- Using a wet tablespoon, place 20 spoonfuls of the mixture onto a baking paper-lined tray.
- Use the back of the spoon to shape the dollops into circular, 3 cm-thick shapes.
- Place the tray into the oven. Bake for 25 minutes until golden brown.
- Remove the tray from the oven. Leave the cookies in the tray to cool for 5-10 minutes before placing them on a rack to cool further.
