Chocolate Chip Chickpea Cookies

Ingredients:

400g chickpeas, drained and rinsed thoroughly

80g oats

2 medium bananas

50g brown sugar

1 teaspoon vanilla

1 teaspoon baking powder

40g dark chocolate chips

Method:

  1. Heat the oven to 180 degrees Celsius.
  2. Place all ingredients excluding the chocolate chips into a food processor. Blitz for 2-3 minutes until very smooth.
  3. After removing the blade from the processor, add the chocolate chips and mix with a spoon.
  4. Using a wet tablespoon, place 20 spoonfuls of the mixture onto a baking paper-lined tray.
  5. Use the back of the spoon to shape the dollops into circular, 3 cm-thick shapes.
  6. Place the tray into the oven. Bake for 25 minutes until golden brown.
  7. Remove the tray from the oven. Leave the cookies in the tray to cool for 5-10 minutes before placing them on a rack to cool further.
