Coconut Lime Cupcakes

Ingredients (For 12 – 15 large cupcakes):
For the batter:
1 ½ cup all purpose flour
2 teaspoons baking powder
1 cup sugar
½ cup softened butter
2 large eggs
1 tablespoon vanilla essence
½ cup of coconut milk
1 cup shredded coconut
Pinch of salt
For the icing:
½ cup butter
3 cups powdered sugar
2 tablespoons lime zest
1 tablespoon fresh lime juice
2 tablespoons coconut flakes
Method:
Preheat the oven to 180 degrees Celsius.
In a large mixing bowl, mix the butter and sugar together until fluffy. Add in the eggs one at a time and mix well. Add the vanilla essence.
In a separate bowl, mix the flour, baking powder and salt together. Add the dry ingredients to the butter and eggs mixture, and combine well.
Add in the coconut milk in a slow stream while mixing well. Once everything has been combined, add in the shredded coconut.
Grease a cupcake pan (or use cupcake baking cups), and fill each cupcake mould to ¾ full of the batter.
Bake in the preheated oven for 15-20 minutes. Remove, and allow to cool before icing.
For the icing:
Using an electric mixer, blender, or use a whisk by hand to mix the butter, lime juice and lime zest together. Then, add the powdered sugar and combine well until the desired consistency is reached.
Once the cupcakes have been iced, garnish with some coconut flakes.
