Cucumber, Cilantro and Chives Smoothie

Ingredients:

335g cucumber
3g cilantro
18g chives
175g milk
10g sherry vinegar
75g olive oil
Salt and pepper, to taste

Method:

1. Dice the cucumber, then chop the chives and cilantro.

2. Blend all ingredients until smooth. Add the olive oil in a continuous trickle.

3. Season with salt and pepper to taste, then pass through a fine mesh and refrigerate.

4. Pour the mixture into glasses. Serve with garnishes like shrimp or mussels.
