Cumin-Coriander Sirloin Steak

Ingredients:
1 tablespoon brown sugar
1/2 teaspoon salt
1/2 teaspoon ground cumin
1/2 teaspoon ground coriander seeds
1/4 teaspoon ground red pepper
450g boneless sirloin steak (about 3cm thick), trimmed
Method:
1. Preheat oven to 230 degrees Celsius.
2. Coat a 20cm cast-iron skillet with cooking spray. Place the pan in the oven for five minutes.
3. Combine the brown, salt cumin, coriander seeds and red pepper. Rub over both sides of steak, then place the steak in the pan.
4. Place in the oven and bake on each side for seven minutes, or until it’s cooked to your liking.
5. Remove the pan from the oven, and let the steak stand for five minutes. Cut the steak diagonally across the grain into thin slices.
