Delicious Oatmeal Biscuits

Ingredients (for approximately 35 cookies):

1 cup unsalted butter, softened
1 ½ cups brown sugar
1 large egg
1 ½ cups all-purpose flour
1 tsp baking soda
1 tsp cinnamon
¼ tsp nutmeg
¼ tsp salt
1 ½ tsp vanilla extract
1 ½ cups rolled oats
1 cup desiccated coconut

Method:

1. Preheat the oven to 190 degrees Celsius.

2. Combine the flour, baking soda, cinnamon, nutmeg and salt in a small bowl and set it aside.

3. Using the back of a fork, cream the butter with the sugar in a large bowl until smooth – this will take around 2 minutes. Add the egg and vanilla to the large bowl and beat well.

4. Add the dry ingredients from the small bowl and mix thoroughly. Stir in the final ingredients – the oats and desiccated coconut.

5. Once everything is smoothly mixed together, use a teaspoon to scoop the mixture onto a greased baking tray, and shape into rounds. Making sure to leave at least 5cm between each cookie.

6. Place in the oven and allow to bake for approximately 12 to 14 minutes, or until lightly golden.

7. Remove the biscuits from the oven and allow them to cool in the tray for 5 minutes, then transfer to a wire rack to cool completely.
