Easy Beef Stroganoff

Ingredients:

30ml olive oil
800g beef strips
Salt and black pepper
2 small onions, cut into rings
1/2 cup hot water
1 small punnet of button / white mushrooms
1 teaspoon garlic, finely chopped
250ml sour cream
2 cups rice, uncooked

Method:

1. On high heat, heat some of the olive oil in a cast iron pot or wok.

2. Add a quarter of the beef strips to the pan. Saute the beef strips until they are brown.

3. Remove the strips from pan, then repeat with the remaining, only adding a quarter at a time. Season with salt and black pepper.

4. Cover the rice with water, then add salt and cook until done.

5. In the same pot or wok used for the beef strips, add a bit more oil and the onions.

6. Add water to de-glaze the pan. Put in the garlic and mushrooms, and leave to cook until they are soft and translucent.

7. Mix in the sour cream If the sauce is still a bit thin, leave to cook for another five minutes to reduce and thicken.

8. Add in the beef strips, stir, and season with salt and pepper if needed. Serve on rice or pasta.
