Fresh Coconut Salad

Ingredients:
30g pea shoots
30g watercress
2 bunch spring onions, finely sliced
1 carrot, shaved into ribbons
2 baby cucumbers, sliced
50g cashew nuts
1 small fresh coconut, flesh sliced into strips
125ml reserved liquid from the coconut
15ml soy sauce
1 dash lime juice
Method:
1. Toss together the pea shoots, watercress, spring onions, shaved carrot ribbons, sliced baby cucumbers and cashew nuts.
2. After slicing the coconut flesh into strips, toss them in with the other ingredients.
3. Mix together the reserved coconut water with soy sauce and a dash of lime juice. Use as a dressing for the salad.
