Grilled Chicken Caesar Salad

Ingredients:
For the dressing:
250ml milk
125ml light mayonnaise
1 tablespoon Dijon mustard
2 garlic cloves, minced
1 teaspoon anchovy paste, (optional)
1/2 teaspoon salt
For the salad:
1 tablespoon lemon juice
2 teaspoons Dijon mustard
1 garlic clove, minced
1/4 teaspoon salt
1/4 teaspoon pepper
4 chicken breasts, boneless and skinless
10 cups romaine lettuce, torn
Croutons
180ml pre-shredded blend Italian cheeses
Method:
1. For the dressing, whisk together the milk, mayonnaise, mustard, garlic, anchovy paste (if using), salt and pepper in a bowl.
2. Gradually whisk in the lemon juice. Let the dressing stand for at least 10 minutes, or until thickened.
3. For the salad, combine the lemon juice, mustard, garlic, salt and pepper. Brush this over both sides of the chicken breasts.
4. Grill chicken over medium heat (or broil) for 15 minutes (turning once), or until no longer pink inside. Transfer to cutting board, and slice thinly.
5. Toss lettuce and croutons with enough dressing to coat. Arrange the salad on plates before sprinkling with cheese, then top with chicken. Drizzle with more dressing and croutons to taste.
