Honey Mustard Coated Salmon

Ingredients:
4x180g salmon fillets
1/2 cup wholegrain mustard
1/4 cup honey
1 tablespoon coconut oil
1 sprig of fresh rosemary
Salt and pepper to taste
Method:
1. Heat the oven to 150 degrees Celsius, with your oven rack placed in the centre.
2. Mix the mustard and honey in a small bowl, and then set aside.
3. Dry the salmon with a kitchen paper towel, and then season with salt and pepper to taste.
4. Use the coconut oil to fry the salmon for just 2 minutes, or until it develops a crust. Turn it over, and coat the top with your honey mustard sauce.
5. Place the salmon in an oven safe bowl, and bake at 135 degrees Celsius, for approximately 5 – 10 minutes, depending on the thickness of your salmon.
6. Serve warm, with a grilled vegetable of your choice.
