Kale Fritters

Ingredients:

4 large eggs
95g almond flour
40g Parmesan cheese
1 tablespoon minced garlic
1 teaspoon kosher salt
1/2 teaspoon black pepper
25g scallions, white and green parts, chopped
230g kale leaves
60ml olive oil

Method:

1. Preheat the oven to 90 degrees Celsius.

2. Place the eggs, flour, cheese, garlic, kosher salt, black pepper and scallions in the bowl of your food processor. Briefly process to combine.

3. Add the kale gradually, about a quarter at a time, and process to combine.

4. Heat half of the olive oil in a large, non-stick skillet over medium heat. Using a 60ml-measuring cup, drop the kale fritters into the oil. Fry for four to five minutes on each side until they are golden-brown.

5. Keep the cooked fritters in the warm oven while you add more oil to the pan and fry another batch.
