Lemon Chicken

Ingredients:
For the marinade:
300g chicken breasts
1 tablespoon oil
1 teaspoon ginger paste
2 tablespoons lemon juice
Salt as needed
1/4 teaspoon lemon zest (optional)
3/4 teaspoon red chili powder
1/8 teaspoon turmeric
For frying the chicken:
1/2 tablespoon oil
1 tablespoon ginger, chopped or minced
1/2 tbsp garlic
1 green chili, slit
1 onion large, chopped
1/2 teaspoon sugar
1 teaspoon cajun spice mix or garam masala
1/2 tablespoon soya sauce
1 handful coriander leaves
Method:
1. Marinate the chicken breasts with all the ingredients required for the marinade. Set this aside for about one hour and 15 minutes. It can also be refrigerated for longer to overnight.
2. For frying the chicken, heat a pan with the oil. Fry the ginger and garlic together.
3. Add the onions, chili, sugar and salt. Fry until the onions turn pink.
4. Add the marinated chicken and stir. Fry until the chicken is half-cooked.
5. Add the spice powder and stir. Fry for about two to three minutes.
6. Add the soya sauce and mix well. Cook until the chicken is soft and tender. If needs be, you can add more chili powder, spice powder, salt or soya sauce can be added for taste.
7. Add the coriander leaves and fry until they wilt. The chicken should just be moist but not dripping with sauces. Cook to evaporate any excess moisture.
8. Serve the lemon chicken with a side of your choice.
