Lemon Cupcakes

Ingredients (for approximately 12 cupcakes):
For the cupcakes:
160g cake flour
200g sugar
2 teaspoons baking powder
A pinch of salt
125g softened butter
2 eggs
125ml of milk
1 tablespoon fresh lemon juice
For the icing:
70g icing sugar
1 tablespoon fresh lemon juice
Method:
1. Preheat the oven to 175 degrees Celsius.
2. Grease a muffin tray. Alternatively, you can use paper muffin cases.
3. For the cupcakes, place all the ingredients in a large bowl. Use an electric or handheld mixer to beat the mixture for three minutes.
4. Spoon the mixture into the muffin tray or cases. Bake for 25 minutes, or until the cupcakes have risen and are golden brown.
5. For the icing, sift the icing sugar into a separate bowl and mix in the lemon juice.
6. Take the cakes out of the oven. Allow them to cool by placing them onto cooling racks.
7. Drizzle the icing in zig-zag lines over the cupcakes. To cover them completely, you will need to prepare more icing.
