Lentil, Cherry Tomato and Feta Cheese Salad

Ingredients:

50g tinned brown or green lentils, drained and rinsed
50g cucumber, diced
4 cherry tomatoes, halved
2 spring onions, finely chopped
2 teaspoons fat-free dressing
1 tablespoon fresh mint, chopped
40g reduced-fat feta cheese, crumbled

Method:

1. In a shallow bowl, combine the lentils, cucumber, cherry tomatoes, spring onions, dressing and mint. Toss well.

2. Crumble the feta cheese over the top and serve.
