Marinated Pork Chop with Rosemary and Garlic

Ingredients:

450g of pork loin
2 teaspoons of fresh rosemary, minced
1,5 teaspoons of garlic, minced
1 tablespoon paprika
½ teaspoon cayenne pepper
½ tablespoon soy sauce
½ teaspoon white pepper
2 tablespoons canola oil
salt and pepper to season

For the Mango Avocado Salsa:
1 mango, peeled and diced
56g red onion, diced
1 avocado, diced
½ jalapeno, seeded and diced
2 tablespoons lime juice
1 tablespoon olive oil
salt and pepper to season

Method:

1. Using a food processor, dice the rosemary, garlic, paprika, cayenne pepper and soy sauce together.

2. Salt the pork slightly, then coat the meat with the processed mixture. Refrigerate for 30 minutes (or more, to maximise flavour).

3. To make the salsa, combine in a medium bowl the mango, jalapeno, avocado, onions, lime juice, olive oil, salt and pepper.

4. Remove the pork from the fridge and place on preheated grill pan. Cook until golden brown on both sides.

5. Serve immediately and enjoy.
