Mashed Potato Truffles

Ingredients (makes 12):

For the truffles:

175g dark chocolate chips
165g mashed potatoes, cold
1/2 teaspoon vanilla essence

For rolling:

50g cocoa powder
75g coconut flakes
65g powdered sugar
75g nuts, finely chopped

Method:

1. In a small bowl, add the chocolate chips. Melt them in the microwave until they are completely soft and gooey. Stir gently with a spoon. Stir in the mashed potatoes and vanilla essence.

2. Place the mixture in the fridge to firm up for 30 minutes.

3. Pour your rolling mixture in little bowls and have them ready.

4. Take one tablespoon-sized hunk of the mashed potato mixture and roll it between the palms of your hands to form a ball-sized truffle.

5. Roll the truffle in desired in the cocoa powder, then place on a baking sheet.

6. Repeat the above two steps with the remaining 11 truffle using the cocoa powder, cocoa flakes, powdered sugar and nuts. Afterwards, place the sheet in the refrigerator until they are firm and ready to eat.
