Melon and Prosciutto Kebabs

Ingredients:

1 sweet melon, peeled, halved and seeds removed
100g parma ham or prosciutto, thinly sliced
12 wooden cocktail skewers
60ml olive oil
12 sage leaves
Balsamic reduction
Extra virgin olive oil
60ml Parmesan shavings

Method:

1. Cut the sweet melon into 3cm-cubes.

2. Assemble the melon cubes and ham (or prosciutto) slices onto each skewer.

3. In a frying pan, heat the olive oil and fry the sage leaves until crispy. Remove and place on a sheet of paper towel to absorb excess oil.

4. Arrange the kebabs on a serving platter or board. Keep chilled.

5. When ready to serve, drizzle with olive oil and balsamic reduction, then sprinkle with the crispy sage leaves and Parmesan shavings.
