Mince Cheese Bites

Ingredients:
300g mincemeat
400g puff pastry
2 tablespoons olive oil
250g jalapeno cottage cheese
1 half red onion, diced
Salt and pepper to season
Method:
1. Heat the olive oil in a pan and fry the onion until golden brown.
2. Add the mincemeat and season. Cook for approximately 15 minutes, stirring frequently. Remove from the stove and keep aside.
3. Roll out the pastry on a flat surface and cut into small squares.
4. Spoon about 1 tablespoon of mincemeat in the centre of each square base.
5. Top with about 1 teaspoon of the jalapeno cottage cheese.
6. Place the four corners of the square together at the top of each bundle. Twist or pinch to seal, leaving small gaps between the seams.
7. Place the pastry bundles onto a medium baking tray. Bake for approximately 15 minutes at 150 degrees Celsius or until the pastry is golden brown. Serve warm.
