Moroccan Beef Strips

Ingredients:

15ml olive oil
1 large onion, sliced
10ml ground cumin
5ml lemon rind, finely grated
410g canned tomatoes, diced
750g stroganoff/stir-fry beef
25ml mint leaves, finely shredded
Salt to taste
1 packet ready-made couscous with garlic and chilli

Method:

1. In a pan, cook the onion in the heated oil until soft. Add in cumin and lemon rind, and cook until fragrant. Stir in the tomatoes, and allow to simmer for five minutes.

2. In the meantime, prepare couscous according to the on-pack directions.

3. In a separate oiled pan, stir-fry the meat in batches on high heat, until browned and tender.

4. Add the beef to the tomato mixture, with the mint and salt to taste. Reheat briefly. Check for seasoning and serve immediately.
