Romantic Date Night

Ingredients:

a) Blueberry Sauce
680g fresh blueberries
1/4 cup water
3 tablespoons sugar
1 teaspoon cornstarch
1 tablespoon lemon juice

b) Crust
2 cups tennis biscuit crumbs
1 tablespoon white caster sugar
1 stick (1/2 cup) butter, melted

c) Cheesecake Filling
1 1⁄2 cups whipped cream, cold
230g cream cheese, room temperature
1 1⁄2 cups plain greek yogurt
1 cup icing sugar

Method:

1. Heat a small saucepan and add the blueberries, water, sugar and cornstarch. Remember to keep a few blueberries for garnishing.

2. Mash the blueberries in the saucepan, until smooth with a few chunks.

3. Cook for approximately 4 minutes, or until the sauce has slightly thickened, then add the lemon juice. Remove from heat and keep aside.

4. Mix the tennis biscuits and sugar in a medium sized bowl. Keep stirring while slowly adding the melted butter. When fully combined, it should look like wet sand.

5. Add the mixture to a medium size glass baking dish, then press the crumbs down to make an even layer. Keep aside.

6. Beat the whipped cream on high speed with a whisk attachment (or in a large bowl with a hand mixer), for 3 – 5 minutes. Transfer the whipped cream to another bowl and set aside.

7. Repeat previous step, now using cream cheese, greek yogurt and icing sugar.

8. Add in half of the whipped cream to the cream cheese mixture and stir to combine. Then add the other half of the whipped cream, and gently fold it in. This will make your cheesecake mixture light and airy.

9. Add the cheesecake mixture on top of the crust. Gently press to remove the air between the two layers.

10. Pour the blueberry sauce on top of your cheesecake, add a few solid blueberries for garnish, and refrigerate for an hour until firm.
