Oven Baked Pork Chops

Ingredients:
4 pork chops
Salt and pepper to season
2 tablespoons canola oil
1 tablespoon creole seasoning
1,5 teaspoons minced thyme
1 tablespoon minced garlic
½ tablespoon Dijon mustard
1 teaspoon worcestershire sauce
3 tablespoons brown sugar
450g cubed potatoes
450g asparagus, green beans or carrots (optional)
2 tablespoons parsley (garnish)
Method:
1. Preheat oven to 200 degrees and place the rack in the centre of the oven. Line a baking sheet with tin foil then lightly cover the foil with oil, or grease it with a non-stick spray.
2. Season the dried out pork chops with pepper and salt. Set to the side.
3. Combine the creole seasoning, minced thyme, garlic, Dijon mustard, worcestershire sauce, sugar and oil in a bowl. Baste the chops with this mixture then place on the sheet.
4. In a second bowl, flavour the potatoes with salt, oil and creole seasoning. Arrange next to the pork chops.
5. Place the sheet in the oven and cook for 22 minutes, making sure the chops are roasted all the way through.
6. Serve immediately with parsley on the side.
