Pan-Seared Watermelon Steak

Ingredients:

1/2 large watermelon, seedless
1 tablespoon oil
3 tablespoons balsamic reduction
2 tablespoons honey
2 tablespoons fresh mint, chopped
50g feta cheese, crumbled

Method:

1. Cut the watermelon in half lengthwise. Placing it flat-side down, cut into 4cm-wide slices. Cut the largest rectangle possible from each of these slices. You should be able to get about six steaks from half of a watermelon.

2. Pat each of the steaks dry with paper towels, then place in refrigerator, uncovered, for one to two hours to dry out excess moisture. Give them a final pat right before cooking.

3. Heat the oil in a large saute pan over medium-low heat. Gently slide each steak in, cooking for about five minutes on each side.

4. Increase heat to medium-high and continue to cook each side for one minute, or until lightly browned.

5. Drizzle the balsamic reduction and honey over the steaks. Top each with mint and crumbled feta.
