Pear, Butterbean, Walnut and Rocket Salad

Ingredients:

For the salad:

410g canned pear halves in syrup, drained and sliced
410g canned butterbeans, drained
100g feta, crumbled
100g toasted walnuts
Wild rocket

For the dressing:

125ml orange juice
30ml honey
15ml white wine vinegar
90ml olive oil
30ml chopped mint

Method:

1. Arrange the salad ingredients onto a large serving platter.

2. In a separate bowl, whisk together the dressing ingredients. Then, drizzle the dressing over the salad ingredients before serving.
