Planked Brie with Blueberry Chutney

Ingredients:

3 tablespoons packed brown sugar
2 tablespoons shallots, finely diced
2 tablespoons cider vinegar
1-1/2 teaspoons fresh ginger root, finely grated
3 whole cloves
250ml blueberries
1 round (10cm) Ontario brie cheese
Crackers or sliced baguette

Method:

1. In small saucepan, combine the sugar, shallots, vinegar, ginger and cloves.

2. Bring to simmer over medium heat, stirring until reduced and syrupy, for one to two minutes.

3. Discard the cloves, then stir in the blueberries. Transfer to a medium glass bowl, cover and refrigerate until ready to use (or up to one day).

4. Place the soaked cedar plank on preheated grill over medium-high heat. Cover and grill until plank starts to smoke and crackle, turning once, for two to four minutes.

5. Place the cheese on plank, close lid and reduce heat to medium-low. Grill for five minutes or until golden brown.

6. Top with half of the blueberry chutney; close lid and grill until a little puffy, for one to two minutes.

7. Carefully remove the plank with cheese from the grill. Let it cool two minutes.

8. Place planked cheese on platter. Serve with remaining blueberry chutney and crackers.
