Potato Salad with Sour Cream and Chives

Ingredients:

250ml sour cream
250ml cream cheese of choice
1 garlic clove, crushed
2kg baby potatoes, cooked until soft and halved (allow to cool)
50ml cream/milk
1-2 cups chives, chopped
Salt and black pepper, to taste
A handful fresh parsley, to serve

Method:

1. Combine the sour cream, cream cheese and garlic clove.

2. Add small amounts of cream until the desired consistency has been reached.

3. Add the chives and seasoning, then pour over the potatoes. Mix gently but thoroughly, and taste one of the potatoes.

4. Adjust the seasoning and scatter with fresh parsley leaves.

5. Leave it at room temperature for at least an hour before the salad is ready to be eaten, so that the flavours can mix together.
