Red Leaf Salad with Mango Chutney Dressing

Ingredients:

For the salad:

2l red leaf lettuce, torn
1 tart apple, coarsely chopped
125ml green onions, sliced
125ml seedless red grapes, halved
250ml whole peanuts, unsalted and roasted

For the dressing:

1 teaspoon curry powder
1/2 teaspoon granulated sugar
1/8 teaspoon ground turmeric
A pinch of salt
60ml lemon juice, freshly squeezed
3 tablespoons mild or hot mango chutney
2 tablespoons red wine vinegar
60ml canola oil

Method:

1. For the salad, combine the torn lettuce, apple, green onions and grapes in a large bowl.

2. For the dressing, combine all the dressing ingredients in a blender. Blend until smooth. With the motor running, through the feed tube, gradually add oil and process until blended.

3. Pour half of the dressing over salad and toss to coat. Garnish with the peanuts. Pass the remaining dressing at the table, if desired.
