Roast Beef and Grilled Onion Salad

Ingredients:
2 medium red onions, peeled and sliced
80ml olive oil
Salt and ground black pepper
1 tablespoon wholegrain mustard
1 tablespoon white wine vinegar
250g mixed salad leaves, washed and dried
2 green shallots, finely sliced
350g rare roast beef, thinly sliced
Method:
1. Pre-heat a chargrill on high.
2. Brush the sliced onions on both sides with one tablespoon of the olive oil, and then season with salt and pepper.
3. On the chargrill, cook the onions one to two minutes on each side, or until they are tender.
4. In a screw-top jar, combine the remaining olive oil, mustard and vinegar. Season with salt and pepper, and shake well.
5. In a large bowl, place the salad leaves and green shallots.
6. Reserve one tablespoon of the dressing. Pour the remaining dressing over the salad and toss to combine.
7. Place the salad onto serving plates, and top them with the roast beef and grilled onions. Drizzle with the reserved dressing. Serve immediately.
