Roasted Tomato and Feta Salad

Ingredients:

500g baby tomatoes, cut in halves
100 ml olive oil
½ tsp salt
½ tsp freshly ground black pepper
2 tsp sugar
1 tbsp balsamic vinegar
200g feta cheese
7 to 10 basil leaves
Extra salt and black pepper for seasoning to taste

Method:

1. Preheat the oven to 180 degree Celsius.

2. Mix the tomatoes, olive oil, salt, pepper and sugar together and roast in the oven for one hour.
3. Once done, remove from the oven. Drizzle with balsamic vinegar, and then mix well and let it cool to room temperature.

4. Season with the extra salt and black pepper to taste. Crumble the feta, and add to the tomatoes. Serve in a salad bowl, topped with torn basil leaves.
