Ingredients:
2kg lamb shanks
6 cloves garlic, sliced
12 sprigs rosemary
65ml orange marmalade
300ml lamb stock
300ml red wine
2 tins chopped tomatoes
Method:
1. Preheat the oven to 160 degrees Celsius.
2. Use a knife to make small incisions in lamb. Afterwards, press pieces of garlic and rosemary sprigs into slits. Place the lamb in a roasting pan on top of the onions.
3. Mix the marmalade and wine together, and then pour over the lamb.
4. Pour over the stock and the tomatoes. Season with black pepper and cover with foil. Place in the oven for three hours. Remove the foil and turn the shanks, spooning the liquid all over them.
5. Roast for another 20 minutes without the foil.
6. Serve on creamy mash with green beans tossed in butter and salt.
