Salmon Ceviche

Ingredients:
For the marinade:
Juice from 1 lime
6 spring onions, finely chopped
1 clove garlic, finely chopped
1 red pepper, finely chopped
1 teaspoon ginger, grated
50ml olive oil
1 tablespoon soy sauce
Salt and black pepper
For the ceviche:
400g fresh salmon
1 fennel
Pomegranate seeds
1 tablespoon black sesame seeds
4 tablespoons chopped coriander
Method:
1. To make the marinade, combine all the ingredients in a bowl and mix well.
2. Cut the salmon into very thin slices using a sharp knife. Arrange the slices on plates and drizzle with the marinade. Place the fish in the fridge to chill for 10 minutes.
3. Cut the fennel into very thin slices. Then take the fish out of the fridge and gently stir inthe fennel.
4. Sprinkle with pomegranate seeds, coriander and black sesame seeds.
5. Serve and enjoy!
