Shrimp and Grapefruit Skewers

Ingredients:

For the grapefruit dressing:

2 tablespoons fresh grapefruit juice
2 tablespoons extra-virgin olive oil
1 tablespoon fresh mint, chopped
1 teaspoon grapefruit zest
1/2 teaspoon chilli pepper paste
1/8 teaspoon kosher salt

For the shrimp skewers:

450g large shrimp, peeled and deveined
1 grapefruit, peeled and segmented
1/2 teaspoon kosher salt
2 tablespoons extra-virgin olive oil

Method:

1. To make the dressing, whisk together the grapefruit juice, oil, mint, zest, paste and salt in a small bowl. Set aside to let the flavors mix.

2. To start making the skewers, preheat a grill pan set over medium-high heat.

3. Skewer one shrimp in a letter-C shape on a bamboo skewer, followed by a grapefruit segment, then followed by another shrimp. Continue skewering the remaining shrimp and grapefruit segments, until ten skewers have been completed.

4. Sprinkle the salt evenly over the skewers and drizzle with the olive oil. Grill the skewers for three minutes per side, until they are cooked through and opaque.

5. Spoon the dressing over the shrimp, serve and enjoy!
