Spiced Cauliflower Salad

Ingredients:
1 head of cauliflower, quartered and sliced
2 tablespoons olive oil
1/4 tsp paprika
1/4 tsp cinnamon
1/4 tsp turmeric
A pinch cayenne pepper
A pinch of salt
A small head of butter lettuce, washed
A handful of fresh coriander
80g sugar snap peas
1 avocado
20g pine nuts
1/2 red onion, sliced
For the dressing:
1/2 lemon
2 tablespoons olive oil
1 teaspoon balsamic vinegar
Method:
1. Preheat the oven to 200ÂșC. Place the cauliflower into a baking dish, and drizzle with olive oil evenly. Sprinkle the spices and salt over the cauliflower, and then toss to coat.
2. Roast for 20-25 minutes or until it is just softening, but still with a bite. Once done, remove from oven and allow to cool.
3. Arrange the lettuce around a large salad bowl, and top with the other ingredients, including the cooked cauliflower.
4. Place the dressing ingredients in a jar with a tight lid and shake vigorously. Dress the salad, and serve.
