Spicy Pork Stir-Fry

Ingredients:

220g rice stick noodles, uncooked
450g pork tenderloin, cut into thin slices
1 teaspoon ground cumin
2 tablespoons oil, divided
225g fresh green beans, trimmed, cut diagonally in half
225g shredded sweet potatoes
2 stalks celery, cut into thin slices
115g barbecue sauce
60ml water

Method:

1. Cook the noodles as per the directions on the packaging, omitting salt.

2. Meanwhile, toss the pork tenderloin with the cumin.

3. Heat one tablespoon of oil in a non-stick wok or large skillet on high heat. Add meat, then stir-fry for three minutes, or until evenly the meat is browned. Remove the meat from the wok and set aside.

4. Heat the remaining oil in the wok. Combine the green beans, sweet potatoes and celery slices together, then stir-fry for two to three minutes, or until the beans are crisp-tender.

5. Place the meat and any meat juices back into the wok. Add the barbecue sauce and water, then stir-fry for one minute, or until heated through.

6. Drain the noodles. Top with the stir-fry and serve.
