Spinach Salad with Lemon and Mint Recipe

Ingredients:
1 lemon
10g fresh mint leaves, finely sliced
1 1/2 teaspoons kosher salt
Freshly ground black pepper
230g baby spinach leaves
3 tablespoons extra virgin olive oil
Method:
1. Cut off the top and bottom of the lemon, and slice off skin and pith. Cut the lemon flesh into 6mm-thick rounds, then slice each round into eighths
2. In a salad bowl, mix together the lemon, mint and salt. Season with pepper to taste.
3. Add the spinach leaves and oil, and toss well. Garnish with additional mint, and serve.
