Strawberry Mango Salad with Chicken

Ingredients:
a) Strawberry Poppyseed Dressing
1/2 cup olive oil
1/3 cup apple cider vinegar
1/4 cup honey
4 medium strawberries, stems removed
1 tablespoon poppyseeds
1/4 teaspoon salt
b) Strawberry Mango Salad with Chicken
8 cups baby greens (a mixture of spinach, kale, and rocket)
2 boneless chicken breasts, approximately 230g each
1 medium mango, diced
8 medium strawberries, diced
1 medium avocado, diced
1 cup of almonds, roasted and sliced
4 teaspoons olive oil
Salt and pepper to taste
Method:
1. Mix all the ingredients for the strawberry and poppyseed dressing in a food processor. Blend until smooth and juicy.
2. Season the chicken breasts with olive oil, salt and pepper. Roast in the oven for 20 minutes, depending on the thickness of your chicken breasts. Dice them and keep aside.
3. Mix all the remaining salad ingredients in a large salad bowl, and add the chicken.
4. Top with the blended strawberry salad dressing, and serve immediately.
